The Single Most Impactful Food Swap for Women Over 40 — Start Here

If you've spent years trying to eat well and still don't feel the way you think you should — this is the practical piece. Not more theory. Just the one swap that moves the needle most, and how to work outward from there at your own pace.
Four weeks ago we started with a researcher named Ancel Keys, a flawed study, and decades of nutrition advice that told us to fear one of the most essential nutrients our bodies need.
Today we close the month with something different.
Clarity.
You now understand why fat matters, what it does inside your body, which fats support your health, and which ones quietly undermine it. That's not small. Most people — including most doctors — were never taught any of this.
The single most impactful swap you can make
The one I recommend to almost every client — is this:
Cook in butter. As much as you easily can.
Frying pan. Baking. Sautéing. Roasting vegetables. Scrambling eggs. Anywhere you'd normally reach for a cooking oil, butter can almost always go instead. It's stable at cooking temperatures, it's deeply satisfying, and it makes food taste better.
Just read the ingredient label before you buy — real butter should contain nothing more than cream and salt. If you see additional oils or additives, put it back.
And if dairy doesn't work for you, use ghee instead. Ghee is butter with the milk proteins removed — it's essentially pure butterfat. Most people who react to dairy react to the proteins, not the fat itself, which means ghee is often very well tolerated even by people who can't do butter.
Start there. That one habit, applied consistently, removes seed oils from some of your most frequent daily exposures and replaces them with one of the most stable, nourishing fats available.
What about the trickier swaps?
Two places where butter doesn't translate as easily — salad dressings and mayonnaise.
For salad dressings, look for options made with olive oil — and apply what you learned last week about EVOO authenticity. Or make your own with a quality olive oil, an acid like lemon juice or vinegar, and simple seasonings. It takes two minutes and you know exactly what's in it.
For mayonnaise, look for avocado oil-based versions — they're increasingly available in most grocery stores. Check the ingredient label carefully and make sure avocado oil is the only oil listed.
These aren't urgent. Get the cooking fat right first. Then work outward from there.

Here's what you knew at the start of June:
Fat is bad. Choose low fat. Avoid saturated fat. Use vegetable oil.
Here's what you know now:
Fat is essential raw material your body uses to build hormones, repair your brain, fuel your cells, and absorb critical vitamins. The fats you were told to fear are chemically stable and anti-inflammatory. The fats you were told to use are rancid before they leave the factory, and drive a chain of events inside your body that ends in inflammation and cardiovascular disease.
That's not a small shift. That's a complete reframe.
And it happened in four weeks.

This isn't about perfection.
You don't need to overhaul your entire kitchen overnight. You don't need to read every label on every product you own. You don't need to get it right 100% of the time.
What matters is direction.
Every meal where you choose butter over canola oil is a meal that supports your body instead of burdening it. Every swap moves you forward. And as Dr. Chris Knobbe's research reminds us — your body is always working to clear, repair, and rebuild. It just needs you to keep giving it better inputs.
Start with butter. Go from there.
